Similarity cures. Eating something similar to our body organs is good for the organs. The red beans are similar to the kidneys, and then they cure the kidneys. Root vegetables to legs and hips, Vegetable skins to human skins, lotus roots to the lungs, and so on.
Our ancestors had a custom of eating red beans twice a month. They even had a saying like "Let's eat red beans on first and fifteenth each month."
Animal proteins are tend to stay and clog in the glomeruli in the kidneys. Our ancestors knew from experience that red beans dissolve the clog and left us a eating custom.
Lotus root has many holes and resembles the lungs that have alveoli. They are good for asthma or bronchitis.

Kazue Ohmori (80yrs) answered the above to a student who had always asked her scientific explanation. Kazue said, “Don’t always memorize scientifically. Just remember our ancestors’ saying.” Of course she is able to answer using scientific terms because she had studied nutrition at a college and worked at a hospital before she became macrobiotic. (In china lotus is thought to be good for stomach. It is also right.) Lotus is unique vegetable. It has both powers. It contracts cells (yang), while expands them (yin). It makes cells supple. Kimpira for normal condition: burdock : lotus : carrot =50 : 30 : 20. Kimpira for people with asthma: burdock : lotus = 50:50 or lotus 100%.
